Charlie Choys has to be one of the best buffets I've been to. It hosts a variety of cuisines (Indian, Chinese and a bit of Italian and Mexican) so there's plenty to choose from.
I'd say there's about 8-10 starters to pick from, 7-8 mains and 5-6 desserts. If you're looking for more variety then Jimmy Spices is the place to be. Hopefully I'll be going there soon so I can tell you guys all about it.

They have cooking stations in the middle of the restaurant, so you can ask the chefs to make you a fresh naan (plain, garlic or cheese) or a fresh stir fry.
Stir-Fry
They basically have a pick-a-mix thing going on with the stir fry (you can see it in the picture below); they had dishes of vegetables, noodles and different meats (chicken and beef); you put everything you want in the stir-fry on your plate, hand it to the chef and select a spice level (spicy, medium or mild). One of the waiters brings out the noodles to your table once they're ready.

In my opinion, this restaurant has great variety but obviously that means you have to be quite selective with what you get. I recommend trying out the Oriental food, I personally thought it was much better than the Indian food.
The only downside to this place for us Londoners is that the restaurant isn't in London - eek. It's just outside the M25 (Woking), but if you're ever around the area I would recommend trying it out.
